OK, lesson learned: tamales are really, really time intensive. I shouldn't have waited until 8:30 to start them. I'm going to be here for at least another hour and a half. At least.

Of course if I had food-safe string, I could have saved at least half an hour.

It wasn't the parchment paper that concerned me, it was the boiling vs. steaming. But if it worked, that's all that matters!

You know what's even more delicious, and actually tastes like tamales? Carnitas-stuffed masa, wrapped in folded corn husks, then steamed.

Beef in adobo-stuffed masa, wrapped in folded parchment paper, then boiled tastes pretty good as well, though.
