OK, lesson learned: tamales are really, really time intensive. I shouldn't have waited until 8:30 to start them. I'm going to be here for at least another hour and a half. At least.

Of course if I had food-safe string, I could have saved at least half an hour.

What do you want string for? You wrap them in the corn husk, no string needed!

a) If you don't tie them up, they can fall apart when you boil them.

b) I couldn't get cornhusks at the local markets, so I used parchment paper instead. Same principle, though.

a) You should be steaming tamales, not boiling them.
b) That's like saying you could substitute vodka for rum in bananas foster. Yes it's the same IDEA but the execution is all wrong.

It wasn't the parchment paper that concerned me, it was the boiling vs. steaming. But if it worked, that's all that matters!

You know what's even more delicious, and actually tastes like tamales? Carnitas-stuffed masa, wrapped in folded corn husks, then steamed.
