Jul. 1st, 2011 09:26 amDinner last night was some raw beef cubes that, despite Wikipedia, I did marinate before eating in my own especially peppery version of an awaze sauce. Added some herbed clarified butter before eating, too. I actually find gored gored better when it's given a very brief sear (hooray for the maillard reaction!) so after a couple of raw cubes I decided to give the rest a (very) brief taste of the cast iron. Totally worth it. Made the flavor that much richer.
Ate it with injera, of course. Some cauliflower-and-garlic paste for seasoning, some pickled beets for a side.
