(no subject)

Tonight: A simple pork chili and some skillet cornbread. I say "simple", but cooking everything from scratch takes a damn long time. I wish I could have found some sliced pork shoulder, because butchering and trimming a whole damn roast by hand takes forever, and isn't a lot of fun either.

So, this isn't the most important thing in your life right now but...

Find a Pork Person at the Reading Terminal Market. Buy all your pork from them. Talk to them about what you do with the pork. They may eventually be willing to do interesting cuts for you.

My Uncle Geo had a pork person and a beef person and a fowl person. He was fiercely loyal to Harry Ochs and sons, but I think they only do beef. If they do more, they're probably the most receptive to requests.
